Admittedly, this sort of thing can require some psychological gymnastics. For instance, if they’ve written something like “Netflix, wine, and cheese,” you don’t have lots to go off. But there’s something there a minimal of and you simply want to use your imagination. Starting with a joke is a little bit extra exciting and it helps to construct rapport before going in with the introduction line.
